    My kiddo’s are not so young nowadays, but I recall the days of chasing my tail trying to keep up with the school run, after-school clubs and activities, and general taxi/feeder/cleaner and social worker role.

    Your 5 healthy snacks are fast, healthy and I imagine super tasty! The Cheesy Zucchini Bites sound great, I’m going to try that for myself. :o)

    All of the snacks you’ve listed appear so quick to make which is a must-have as you’ve expressed; it’s hard enough getting healthy into them, but even harder keeping their attention span, so you need quick snacks if you’re going to stand of chance. I totally got it.

    • Awe time just flies doesn’t it, I can’t imagine my kiddos all grown up. I was just telling my 8 year old yesterday that he can never move out…lol of course I was joking, but just the thought gets me all emotional. It is better to eat healthy sweet things, as they are far more nutricious for the body than the usual chocolate sweets, and less addctive. It made me think about my own diet and how i can make it healthier, rather than being addicted to chocolate.

As much as I wish I could just make healthy choices ALL THE TIME…that’s just not realistic for anyone. I like to live by the 80/20 rule. 80% of the time I do eat healthy, choosing low carb, low fat, less sugar, and less sodium. However 20% of the time, I will eat the birthday cake, drink the wine, or indulge in a peice of cheesecake. It’s all about balance! (; What’s your favorite sweet treat?

The other day I was wondering if I could make ‘ice cream’ for my grandkids without sugar. So just with fruit or maybe some additives. Do you think that would be possible?

And yes you should try this recipe for ice cream- it’s one of my favorite because it’s low fat, low carb, zero sugar…and SUPER EASY- which is always important to me because of my crazy busy lifestyle. (; This recipe uses frozen bananas as the base for natural sweetness and creaminess. Let me know if you make this and if you like it!

      **Ingredients:**
      – 2 ripe bananas, peeled, sliced, and frozen
      – 1/2 cup unsweetened almond milk (or any unsweetened milk alternative of your choice)
      – 1 teaspoon vanilla extract (optional, for flavor)
      – 2 tablespoons unsweetened cocoa powder (optional, for chocolate flavor)
      – Stevia or your preferred zero-calorie sweetener (to taste)
      – frozen berries/fruit (optional)

      **Instructions:**
      1. Slice the ripe bananas into small pieces and place them in a single layer on a baking sheet. Freeze the banana slices for at least 2 hours or until they are completely frozen.

      2. Once the banana slices are frozen, place them in a blender or food processor. Add the unsweetened almond milk and vanilla extract (if using). Blend until the mixture is smooth and creamy. You may need to stop and scrape down the sides of the blender a few times.
